Absinthe
To understand the use of this fountain, we must go back in time before the prohibition of this sulfurous alcohol in 1915. Absinthe is then a spirit with a high alcohol content between 55 and 70% and strong bitterness. Distillation techniques were rudimentary at the time and everyone, or almost everyone, distilled, making the spirits resulting from this distillation not always good to taste and even adulterated. To deal with this, what we can call today "the traditional service of absinthe" at the fountain with a flat spoon pierced over its entire surface appears. The fountain was filled with water and ice cubes, then a glass with a little absinthe was placed under the tap. On top comes the absinthe spoon (flat and pierced) as well as a piece of sugar. The sugar will then melt on contact with the water dripping from the fountain, to mix with the absinthe. To consume with moderation !
