Son of Edme Julien Gilbert, master tailor, and Catherine Darras, Pierre Julien Gilbert took lessons from the naval engineer and draftsman Pierre Ozanne and the painter Louis-Philippe Crépin.
In 1816, he was appointed drawing teacher for naval students in Brest.
In 1830, he took part in the Algiers campaign on Provence, as the official painter of the expedition.
From 1842 to 1850, he taught drawing at the Naval School.
Pierre Julien Gilbert depicted on canvas a fairly large number of episodes of French maritime splendor, and most of his paintings were exhibited at exhibitions, notably those of 1824 and 1833, each of which earned him a gold medal.
On April 30, 1833, he was made a knight of the Legion of Honor.
