Originally from Lorraine on his mother's side, Hoffmann lives in Metz. He studied at the Ecole des Beaux-Arts in Paris in 1902, where he was later a pupil of Léon Bonnat and Luc-Olivier Merson at the Académie Julian of Jules Lefebvre (for engraving) and of T. Robert- Fleury, at the Beaux-Arts in Nancy, will be a pupil of Jules Larcher.
Gaston Hoffmann has exhibited regularly at the Salon des Artistes Français since 1905, as well as at the Salon des comicistes.
In 1918 he collaborated with Charles Schneider, his friend, met at the School of Fine Arts
His works are now kept at the Musée national des beaux-arts du Québec, thanks to a donation from Jean Piché in 1983.
Gaston Hoffmann becomes a drawing teacher for the city of Paris.
He taught drawing and decorative composition at the École des beaux-arts de Québec from 1924 to 1926.
In 1946, the painter decorated the town hall of the town hall of Noyon representing the great moments in the history of the city.
