Object description :

"Copper Daubière. XIXth C."
Forged basin, assembled by crenellated brass brazing. Interlocking, flared, high rolled edge lid. Robust and elegant bronze handles. Near mint condition, as well as the tinning. Regarding the latter, it seems useful to us to shake up some received ideas, according to which tinning would protect cookware, only verdigris. The latter, copper carbonate and acetate, forms on the surface of objects made of copper and its alloys (bronze, brass) when they remain exposed to the air or buried in the ground. It is a violent poison. It mainly concerns statues, roofs, abandoned objects. It is only rarely seen on kitchen utensils that are regularly maintained. On the other hand, tinning prevents the formation of poisonous salts caused by the prolonged contact of cooking salt (sodium chloride) contained in food, broths, sauces, with the copper in the container. This is why jam basins, sugar and chocolate pans, egg white basins, are never tinned; these preparations being free from sodium chloride. Total length: 45 cm. Width: 22.5 cm. Height: 25 cm. Capacity 10 Liters. Weight: 7.3 kg. The exceptional condition of the tinning allows culinary use in complete safety. This daubière, by the balance of its proportions and the quality of its execution, has nothing to envy to the best brassware productions of the previous century. XIXth c. Very good condition.
