The "hâtelet" is a decorative skewer used for the presentation of a hot or cold dish, during a Grand Service. It is generally surmounted by a motif related to the dish served, such as a rooster, shellfish, crustacean, fish, hare, wild boar... garnished with edible items such as trussed crayfish, quenelles, kidneys, truffles etc.
The skewers are generally in silver metal, sometimes in filled silver. Chiseled solid silver examples such as ours are very rare, even more by 4.
